The boiler heats less than what you request or never turns off due to temperature.
Cause: The aquastat does not cut the signal when it should, due to the wear of the internal contact.
Measure the continuity of the aquastat with the multimeter in both cold and hot conditions to check if it changes state.

The boiler keeps stopping and starting constantly, in very short cycles.
Cause: The aquastat contact operates intermittently and does not stay fixed in its position.
Make sure that the bulb is properly seated in its sleeve, without any play or rust around it.

The boiler locks out due to overheating even though the water is not particularly hot.
Cause: The aquastat gives an incorrect reading because the bulb does not make good thermal contact with the water.
Clean the sleeve of the bulb from scale or dirt before replacing the part.

The boiler does not ignite at all, as if it is not receiving a prior command.
Cause: The aquastat contact remains permanently open and interrupts the ignition circuit.
Measure the continuity of the aquastat when disconnected to confirm if the contact is broken before purchasing a new one.
